Jamaican jerk chicken

This delicious hot and spicy Jamaican meal will certainly tickle your taste buds. The world's hottest peppers, Habanero and Scotch Bonnet are traditionally used, although these have been substituted with Jalapenos in this recipe for less heat.

Ingredients
  • 4-6 tablespoons Jamaican jerk sauce, (available from the local supermarket)
  • 2 large chicken breasts (preferably boneless)
  • 2 red jalapenos, sliced
  • 1 tablespoon extra virgin olive oil
Method
  1. Using a large bowl, mix together the jerk sauce and jalapeno peppers.
  2. Add chicken and paste with mixture, then leave to marinade in the fridge for at least 2-4 hours.
  3. Place chicken breasts on a grill and cook through for 30 minutes, (or when the juices run clear and flesh is no longer pink inside). Please note that you can baste the chicken with marinade during cooking.
  4. If grilling isn't an option, chicken can be roasted in the oven at a temperature of 350°F for about 30-45 minutes.
  5. Once cooked, serve with rice and salad.
