Bruschetta

This really could not be easier. It's a wonderful snack to keep people happy prior to the main course. You can improvise with slices of mozzarella, pieces of prosciutto or other types of ham, anchovies and more besides - it's a really versatile dish.
Ingredients
  • 1 ciabatta loaf, sliced into inch-thick slices diagonally
  • 4 large plum tomatoes
  • A small bunch of basil leaves, torn up
  • 4 cloves of garlic
  • 4 tbsp olive oil
  • Salt and black pepper
Method
  1. Place the tomatoes in a bowl, and cover them with boiling water. Leave for 10 mins until they are soft, and then remove and leave to cool for a couple of minutes.
  2. Slip the skins off them and chop roughly into a bowl. Mix with the torn basil leaves, 1tbsp of olive oil a pinch of salt and a pinch of pepper.
  3. Toast the bread. Crush two cloves of garlic and mix with the remaining olive oil.
  4. Peel the remaining two cloves and rub them on the slices of toast roughly.
  5. Drizzle the garlicky olive oil on the bread, and then top with a spoonful of tomato and basil mix.
