This really could not be easier. It's a wonderful snack to keep people happy prior to the main course. You can improvise with slices of mozzarella, pieces of prosciutto or other types of ham, anchovies and more besides - it's a really versatile dish.
- Ingredients
- 1 ciabatta loaf, sliced into inch-thick slices diagonally
- 4 large plum tomatoes
- A small bunch of basil leaves, torn up
- 4 cloves of garlic
- 4 tbsp olive oil
- Salt and black pepper
- Method
- Place the tomatoes in a bowl, and cover them with boiling water. Leave for 10 mins until they are soft, and then remove and leave to cool for a couple of minutes.
- Slip the skins off them and chop roughly into a bowl. Mix with the torn basil leaves, 1tbsp of olive oil a pinch of salt and a pinch of pepper.
- Toast the bread. Crush two cloves of garlic and mix with the remaining olive oil.
- Peel the remaining two cloves and rub them on the slices of toast roughly.
- Drizzle the garlicky olive oil on the bread, and then top with a spoonful of tomato and basil mix.
