Meatballs

Serve with boiled potatoes, salad and cranberry sauce.
Ingredients
  • ½ cup fine, dry breadcrumbs
  • ½ cup single cream
  • ½ cup water
  • 200g/7 oz minced beef
  • 200g/7 oz minced pork
  • 1 tsp salt
  • ½ tsp ground white pepper
  • Half an onion, chopped very finely or grated
  • 2 crushed garlic cloves
  • 1 egg, beaten
  • 3 tbsp margarine or butter
Method
  1. Mix the bread crumbs, cream and water and let them stand for five minutes.
  2. Work together the beef, pork, salt, pepper and onion. Gradually add the bread crumbs, then the egg. Using your hands, mix to a smooth paste.
  3. Shape into balls - traditionally, larger patties are eaten for dinner, but if arranging a buffet or smorgasbord, use much smaller balls.
  4. Heat part of the margarine or butter in a heavy frying pan and add as many meatballs as you can fit in the pan, giving them room to move around. Fry over moderate heat until the meatballs are cooked all the way through.
