A delicious Italian dessert.

- 4 eggs, separated
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 12 ounces mascarpone cheese
- 18 ounces heavy cream, lightly whipped
- 1 teaspoon Gran Gala (optional)
- 1 14-ounce package Savoiardi cookies
- 1 cup espresso coffee cocoa for dusting
- Method
- Combine the egg yolks and sugar in a bowl.
- Whisk until thick and pale yellow.
Set aside and cool.
- Then, add the vanilla and the mascarpone and continue to whisk until creamy.
- In a separate bowl, whip the egg whites to soft peaks.
- Fold egg whites into the mascarpone filling mixture, and gently mix.
- Then add the whipped cream and Gran Gala, and mix with a rubber spatula until fully incorporated.
- Dip the cookies in the coffee on both sides and drain off any excess.
- Make a layer of cookies on the bottom of a serving dish, and top with the mascarpone cream.
- Continue layering until all is used. Dust the top with cocoa, and refrigerate for about 1 hour prior to serving.
