Irish stew is a wholesome, flavourful dish made with the most readily-available ingredients.
Ingredients:
4 lamb chops 4 medium onions, roughly chopped 4 medium carrots, roughly chopped 4 medium potatoes, quartered 450ml of lamb stock Sprig of fresh thyme 2 tablespoons of chopped parsley Salt and pepper
Method:
1. Trim some fat from the chops, and put in a medium heated pot for until browned. Add salt and pepper.
2. Chop the onion roughly, peel the potatoes and cut into quarters, then peel the carrots and cut into fairly big chunks and add in.
4. After a few minutes pour in the stock slowly. 5. Cover the pan and bring to the boil before turning the heat down to low and simmer for an hour or until the meat is tender.
6. Add in the potatoes, thyme and parsley and simmer for about 15 minutes or until potatoes are tender but still whole. 7. Serve hot with a parsley garnish.
