This tasty vegetarian dish is so easy to do and tastes fantastic. You can serve them as a great main course or divide them up between a few people as a snack - up to you.
- Ingredients
- Choice of vegetables: courgette, yellow or red pepper broccoli, carrot, baby corn, mushrooms - trimmed and chopped
- 4 round flour tortillas
- 75g Cheddar cheese, grated
- Method
- Steam your vegetables by putting them in a colander, covered with tinfoil and placed on top of a pan of boiling water, for 5 mins.
- Place two of the tortillas on a board, top with the Cheddar, add the vegetables (don't over-stack them), top with the Gruyere and then finally add another tortilla to the top of each.
- Place under a hot grill until golden brown, turn over and repeat. Serve.
