Potato and spinach omelette

This is an easy way to feed plenty of people and goes perfectly with a crunchy salad. You can add just about anything to the omelette - here's we've just taken a few store-cupboard ingredients - so experiment and have fun! Serves two as a main meal or four as an accompaniment or snack.
Ingredients
  • 6 fresh eggs
  • One handful of fresh spinach or two tablespoons of tinned
  • 10 small cooked new potatoes, sliced thinly or cubed
  • 1 red pepper, deseeded and sliced
  • 2 shallots, peeled and chopped very finely
  • Fresh chopped parsley
Method
  1. Put all of the ingredients except the eggs and parsley in a frying pan with a splash of olive oil and cook until browned.
  2. Beat the eggs and add the parsley. Pour over the fried ingredients. You can add a little grated cheese if you wish.
  3. Give it a stir until the ingredients are all mixed. Cook over a low heat or until the omelette is cooked about 2/3 of the way through. Transfer to a heated grill and cook until browned on top. Slide onto a plate, let cool for a few minutes and then slice and serve.
