- 110g (4oz) Raisins and sultanas
- 3 eggs, slightly beaten
- 1tsp Vanilla
- 1/2 tsp Cinnamon
- 1/4 tsp Salt

- Place a few extra pieces of buttered bread on top and press down to submerge.
- Add some more milk so that it rises to the level of the bread. You want the pudding moist but the top crusty.
- You could also add two tablespoons of marmalade for an orangey flavour.
- Allow to stand for at least 30 minutes.
- Cover and bake for 30 minutes until the top becomes golden.
- Serve with ice-cream preferably vanilla or use double or single cream as an alternative.
