Bread and butter pudding

It's tasty, it's traditional and it's British - perfect for a family dessert.

Ingredients
  • 7 Slices of bread
  • Butter or margarine
  • 1ltr Milk
  • 110g (4oz) Sugar
  • 110g (4oz) Raisins and sultanas
  • 3 eggs, slightly beaten
  • 1tsp Vanilla
  • 1/2 tsp Cinnamon
  • 1/4 tsp Salt
  • Marmalade, optional
Method
  1. Pre-heat oven to 170°C: 325°F: Gas 3.
  2. Butter a large baking dish.
  3. Spread the butter generously on one side of each slice of bread and line the bottom and sides of the dish with it.
  4. Mix the milk, eggs, sugar, raisins and sultanas, vanilla, cinnamon and salt and pour over the bread.
  5. Place a few extra pieces of buttered bread on top and press down to submerge.
  6. Add some more milk so that it rises to the level of the bread. You want the pudding moist but the top crusty.
  7. You could also add two tablespoons of marmalade for an orangey flavour.
  8. Allow to stand for at least 30 minutes.
  9. Cover and bake for 30 minutes until the top becomes golden.
  10. Serve with ice-cream preferably vanilla or use double or single cream as an alternative.
