Fried ripe plantain

This sweet dish makes a great addition to a Caribbean meal or can be eaten as a dessert or snack.

Ingredients
  • 1 ripe plantain
  • Cooking oil
  • Nutmeg or cinnamon (optional)
Method
  1. Score the plantain skin on either side and then peel.
  2. Slice the plantain in two (width ways) and then begin cutting (length ways) in approximately ¼ inch slices.
  3. Heat oil in frying pan.
  4. Fry slices in pan until golden brown (the oil should be enough to just about cover the plantain slices).
  5. Cook on each side for about 1 minute, ensuring not to burn.
  6. Once cooked, place plantain slices into a layered dish with paper roll or napkins to soak up excess oil.
  7. Sprinkle with nutmeg or cinnamon (optional) and serve.
