- 1 ripe plantain
- Cooking oil
- Nutmeg or cinnamon (optional)
- Method
- Score the plantain skin on either side and then peel.
- Slice the plantain in two (width ways) and then begin cutting (length ways) in approximately ¼ inch slices.
- Heat oil in frying pan.
- Fry slices in pan until golden brown (the oil should be enough to just about cover the plantain slices).
- Cook on each side for about 1 minute, ensuring not to burn.
- Once cooked, place plantain slices into a layered dish with paper roll or napkins to soak up excess oil.
- Sprinkle with nutmeg or cinnamon (optional) and serve.
