Simply great vegetarian option made of soft cheese and spices. Replace the paneer with chicken for a non-veg option if you prefer.
- Ingredients: For the marinade
- 1 large piece of ginger
- 5 cloves of garlic
- 2-3 green chillies depending on preference
- 1 tsp garam masala
- 1 tsp tandoori powder
- Dash of lemon juice
- Bunch of fresh chopped coriander
- 200g double cream or yogurt
- Salt to taste

Ready made block of Paneer cheese
- 1 onion
- 1 green and 1 red pepper
- 150ml whipping cream
- Method
- Crush the garlic and ginger and mix in a bowl with all the other marinade ingredients. Cut the paneer into medium sized cubes and add to the mix.
- Let the ingredients marinate overnight in the fridge, if possible, to allow the flavours to soak through - if not, leave for at least 2 hours.
- Chop peppers and onions into large cubes. Thread the paneer and onions and peppers one after another onto the skewer and cook in a hot oven on 200 degrees for approximately 15 mins, turning occasionally.
- To serve put the skewers on a plate, drizzle some fresh lemon juice, mint chutney and a sprinkle of fresh coriander.
