Paneer

Simply great vegetarian option made of soft cheese and spices. Replace the paneer with chicken for a non-veg option if you prefer.
Ingredients: For the marinade
  • 1 large piece of ginger
  • 5 cloves of garlic
  • 2-3 green chillies depending on preference
  • 1 tsp garam masala
  • 1 tsp tandoori powder
  • Dash of lemon juice
  • Bunch of fresh chopped coriander
  • 200g double cream or yogurt
  • Salt to taste
Ingredients
  • Ready made block of Paneer cheese
  • 1 onion
  • 1 green and 1 red pepper
  • 150ml whipping cream
Method
  1. Crush the garlic and ginger and mix in a bowl with all the other marinade ingredients. Cut the paneer into medium sized cubes and add to the mix.
  2. Let the ingredients marinate overnight in the fridge, if possible, to allow the flavours to soak through - if not, leave for at least 2 hours.
  3. Chop peppers and onions into large cubes. Thread the paneer and onions and peppers one after another onto the skewer and cook in a hot oven on 200 degrees for approximately 15 mins, turning occasionally.
  4. To serve put the skewers on a plate, drizzle some fresh lemon juice, mint chutney and a sprinkle of fresh coriander.
